Hainanese Chicken Rice!
"The Hainanese were one of the last major migrant groups to come to Singapore (edit:ahem, which was a part of Malaya) nearly two centuries ago. They introduced their comfort fare - chicken rice - to the streets around Beach Road near the famed Raffles Hotel. The dish came with simple steamed white chickend over a bed of plain-Jane boiled rice with a ginger and vinegar dip.
However, it did not catch on until a sharp street cook decided to cook the rice with the stock used to boil the chicken, laced with pandan leaves (screw pine leaves that are indigenous to this part of the world), garlic, shallots and ginger. He sold it on a Kandar, or shoulder food cart, which is basically two boxes (one with ingredients and utensils, and the other, a small charcoal stove) on ropes strung over a pole carefully dangled over the shoulder. The legendary Singapore (MEHH. MALAYSIA??) chicken rice is considered a national dish, well loved even by many travellers who have had a brush with it."

So apart from the chicken, perfectly cooked to a moist perfection, there's this other thing...
Ohohohohoho. So delicious.
Sour fishy goodness.
